In my continued quest to eat healthy, I have decided I will not give up dessert. Specifically any dessert with chocolate in it. Ergo I have had to find a way to get my chocolate fix in a more healthy manner, rather than stuffing my face with Cadbury Mini Eggs. As I hunted the web for dessert recipes, I came across a blog that is all about healthy desserts. Seriously. It is true. Chocolate Covered Katie, you are my hero. This site is chock full of delicious recipes that are "healthified." Our favorite recipe so far is the Deep Dish Cookie Pie. What makes it so unusual, aside from the fact that there is no flour in the recipe? It has garbanzo beans in it. Two whole cans of garbanzo beans. Can you tell the cookie is bursting with beans? Not at all. That is what makes it so amazing! It tastes just like an oatmeal chocolate chip cookie. I even made it for Easter and had people asking for the recipe.
