Through the magic of Facebook and a series of links, I found this fun idea for a Halloween-y dinner. It couldn't be easier. Just pull out your favorite recipe for stuffed peppers and after clearing out the shells, carefully cut small faces on the fronts of the peppers. I found a sharp paring knife made it fairly easy to do.
My boys loved it, even when they are getting to ages where they fight me on carving pumpkins. The teenager had a leftover 'happy pepper' after school today, as a snack. He said he'd been thinking about it all day!
Although I got the idea from my sister, through her Facebook posting, I believe the original idea came from a posting on Pinterest. There are fun, clever ideas running rampant over there!
