I got the idea for S'More Pie a few months ago. My first attempt was edible but not great -- the filling was too runny, for one thing. Poking around the cabinet this weekend looking for Valentine's Day dessert inspiration, I realized I still had enough marshmallows, chocolate, and graham crackers to give this pie another go. Plus, we had a new secret ingredient that would really make this pie authentic-tasting: Liquid Smoke.

I've been having my teens do some experimenting in the kitchen this year, and we had picked up some Liquid Smoke to make the BBQ Rib recipe from Jeff Potter's Cooking for Geeks (which came out great, by the way!). Potter himself uses the unusual flavoring to give his S'More Ice Cream that wonderful wood-fired aroma. It seemed perfect for our campfire-less pie.

The final touch to turn this nostalgic taste of summer into a Valentine's treat was to press it into a heart-shaped cake pan. I will admit that serving pie from an irregularly-shaped cake pan is not easy -- but then, this pie probably would be messy to serve (and eat) no matter how you bake it. And yet, so yummy...

Here's my recipe for S'More Pie:

  • graham cracker crust
  • dark chocolate chips
  • instant chocolate pudding mix
  • marshmallows (mini or regular)
  • Liquid Smoke
  1. Make a crust by mixing 1 inner package of graham crackers, crushed, with 6 tablespoons melted butter in a pie tin or cake pan, or use prepared crust.
  2. Into the crust pour enough chocolate chips to cover about half the bottom; distribute evenly.
  3. Bake at 350 degrees for 7 minutes until chocolate chips are softened. Spread with a spatula into an even layer. Chill.
  4. Prepare pudding using pie filling directions on box. (I used 1 small box and about the half the milk called for in the pudding recipe, mixed by machine for 1 minute.) Should be thick and creamy. Spread over chocolate crust. Chill.
  5. Melt marshmallows in microwave about 30 seconds. (Be careful, they expand when heated!) Stir in about 10 drops of Liquid Smoke. Spread over pudding. Decorate with mini marshmallows and/or chocolate chips if desired.
  6. Turn oven on to broil. Put pie on top oven rack under flame for 30 seconds or just until topping begins to smoke. Turn pie to brown evenly.
  7. Serve warmed or chilled.
