Naomy Rodriguez, a fourth-grader at PS 7 in the Bronx, smiles bravely before snacking on wax worms and crickets. The latter are surprisingly edible when sautéed, with a nice crunch and subtle nutty flavor.

Aaron Smith, an 8-year-old New Yorker, munches merrily on mealworms. Deep-fried grubs are all crunch and no flavor, though they do literally melt in your mouth.

Emily Czajkowski and Aaron Smith, 8-year-olds from upstate New York, snack on a variety of crickets and mealworms at the Adventures in the Global Kitchen program, a sequel to the American Museum of Natural History’s successful chocolate exhibit, which attracted hordes of hungry New Yorkers last summer. Museum staffers hope that eating bugs will be just as appealing.
